Milk Science: Aeration → Stretching → Microfoam

Understanding & Know-How

Aeration

Introducing air into the milk from the steam wand. Simple concept, easy to mess up.

  • Tiny amounts of air incorporated into cold milk
  • Bubbles bind to proteins (casein micelles)
  • Sets the foundation for microfoam — sloppy aeration = sloppy texture

Stretching / Tearing

Controlled, intentional air introduction. Some shops say “stretch,” others “tear.” Same thing.

  • Milk expands ~15–25% depending on stretch
  • Still the aeration phase, emphasizing volume added
  • Sovereign-level: early and brief — every hot milk drink gets the same microfoam

Microfoam

Velvety, paint-like texture suited for latte art and smooth mouthfeel.

  • Proteins denature & bond around tiny bubbles
  • Fat stabilizes the foam
  • Shiny, glossy — like wet paint. Zero visible bubbles.

Sound & Wand Placement

  • Right: soft, controlled “tss-tss-tss” kisses of air
  • Wrong: a ripping scream
  • Wand tip sits just below surface — not submerged, not on top

Everything up to this point is important to know. Everything from here on must be memorized.

Milk Steaming Temperatures

Memorize the temperature · the seconds · the hand test

CoolerHotter
130°F
145°F
160°F
160+°F
Cortado
130°F
Hand test: hold 5 seconds before too hot
Turn-off cue: pitcher becomes VERY warm
~5 sec hold
Cappuccino / Macchiato
145°F
Hand test: hold 2 seconds before too hot
Turn-off cue: VERY HOT — must let go
~2 sec hold
Latte
160°F
Hand test: hold 1 second before too hot
Turn-off cue: let go, then wait for a “change of pitch” (trained in person)
~1 sec hold
Call-In / Delivery / “Extra Hot”
160+°F
Hand test: hold 0.5 seconds before too hot
Turn-off cue: let go, then wait for a “deep change of pitch” (trained in person)
~0.5 sec hold
Memory Anchor
  • Cooler drink → longer you can hold the pitcher (5 → 2 → 1 → 0.5 sec)
  • Cortado is the only one you can hold for a real beat — everything above gets hotter fast
  • Pitch is your backup signal above 160°F when your hand has to let go

Coffee Parameters

Memorize the dose & temperatures

Pour Over

ParameterSpec
Dose24–24.5 g
Water Temp197°F (iced and hot)

Drip Coffee

Batch SizeCoffee
Half (small) batch115 g
Full (large) batch230 g

Cold Brew

ParameterSpec
Coffee303 g per gallon of water
Brew Time11.5–12 hours
Serving16 oz cup only — 260 g cold brew, filled with ice

Nitro Cold Brew

ParameterSpec
Cold Brew330 g in canister
Nitrogen Charger1 per drink — shake canister aggressively before pouring
Serving12 oz cup only — no ice, serve immediately
4

Espresso

Set-up, service & variable parameters

Espresso Set Up — Serving a Guest

ElementSpec
Set UpDemitasse cup and saucer, with a side of sparkling water in a Gibraltar glass
Hand OffAlways lead with the origin, then the tasting notes on the bag
Example: “Today we have a Kenyan with notes of sundried tomato, raspberry, and green apple. Enjoy.”

Espresso Variable Parameters

Must be memorized once introduced in “Beginner Espresso Training.”

ParameterSpec
Dose16–18 g
Yield2.1–2.5 × dose
Time15–35 seconds, depending on recipe and conditions
Yield example: 16 g dose → 33.6–40 g yield

Yield at a Glance

16 g dose2.1×
33.6 g
min yield
18 g dose2.5×
45 g
max yield
Under

Under-extracted

Sour, sharp, thin. Too fast or too coarse.

Ideal

Dialed In

Balanced, sweet, syrupy. Correct dose, yield & time.

Over

Over-extracted

Bitter, dry, harsh. Too slow or too fine.

5

Matcha

Powder, water & kettle temperature

Matcha Build

ParameterSpec
Matcha Powder2–2.5 g
Water38–40 g
Kettle Temp171°F (matcha kettle)

Why 171°F?

Matcha is delicate — lower than pour-over’s 197°F. Too hot and it turns bitter and grassy.

  • Powder is measured in grams, not scoops
  • Water is light — just enough to whisk into a smooth paste before milk
6

Iced Drink Ratios & Cold Foam

Milk drops 40 g per size step until 4 oz

Milk by Size

16 ozUpsized Latte
220 g
12 ozLatte
180 g
8 ozShakerato / Short Iced Latte
140 g
4 ozUndertow / Iced Cortado
70 g
Pattern: −40 g per size step. The 4 oz is half the grams of the 8 oz.
  • Light ice, more milk: +40 g of milk, any size (extra charge)
  • Iced chai & iced chocolate: +40 g of milk (no extra charge)

Cold Foam

ParameterSpec
Cold Foam80 g
Total Milk (drinks with cold foam)180 g
Default Syrup22 g
Serving Size16 oz cups only — to accommodate all components

Reading the Cold Foam Build

  • 180 g total milk = the drink’s base milk
  • 80 g of that becomes the foam layer on top
  • Default syrup matches the 12 oz standard (22 g)
  • 16 oz only — all components need the room
7

Syrup & Sweetener Standards

12 oz is your anchor: +11 g per step up, −4 g per step down

SizeSyrupUsed For
Extra shot+11 gAny drink when a customer requests an extra shot (default size 16 oz)
16 oz33 gUpsized lattes, americanos, matcha, cold brew, iced teas, etc.
12 oz22 gLattes, matcha, nitro (avoid flavoring nitro — recommend a latte or regular cold brew instead), hot teas, americanos
8 oz18 gCappuccinos, shakerattos, short americanos
4 oz14 gCortados, undertows
3 oz10 gMacchiatos
2 oz6 gAnyone who adds syrup to a straight shot of espresso
Rule: sizes above 12 oz increase by 11 g per step up; sizes below 12 oz decrease by 4 g per step down. Use these unless a drink explicitly states otherwise (e.g., some seasonal drinks).

Alternative Sweeteners

Stevia — extremely concentrated

Drink SizeStevia
4 oz1 g
8 oz2 g
12 oz3 g
16 oz4 g

Agave

  • Naturally sweeter than all standard syrups
  • Subtract 4 g from the standard syrup measurement for that drink size

Chai & Chocolate

Adding Syrup to a Chai Latte

Half chai, half requested syrup.

Example: Mexican Vanilla into a 12 oz iced chai → 11 g Mexican Vanilla + 11 g chai concentrate.

Hot Chai / Hot Chocolate

  • Follow Syrup & Sweetener Standards
  • Hot: pour ~40 g steamed milk and stir to fully incorporate before pouring the rest

Dialed vs. Undialed Shots

Shot puller manages both sides · FIFO from the outermost shot

DIALED IN
A dialed-in shot is a perfectly executed shot as determined by the shot puller. Always pull from the outermost shot to maintain FIFO.
CategoryDefinition
Dialed InPurist sweeteners, or any half-sweet drink (agave, honey, simple syrup, stevia, brown sugar)
UndialedNon-purist sweeteners — sweetener + added flavor (Mexican vanilla, banana, lavender)
Dialed In — Freshest ShotAny drink 8 oz or below (any sweetener)
